Hands-on cooking, thoughtful demonstration, & shared exploration of the Loire Valley’s food & wine - shaped around each group

L. K. Journal

Food, markets and serious cooking from the Loire Valley

The LK Journal gathers essays, reflections and practical pieces from our kitchen in the Loire Valley. Some of these were written in the early years of Loire Kitchen; others emerge from the questions and curiosities of our kitchen today.

All of them share a foundation in:
• thoughtful technique,
• market-led cooking,
• flavour and seasonality,
• and the conviction that good cooking grows from attention, not haste.

This is not a recipe dump.
This is not a travel blog.
This is a series of reflections — literary and instructional — that explore how and why we cook the way we do.

Rooted in Place

Life in the southern Loire Valley shapes everything we do. The markets, the rivers, the vineyards, the seasons and the producers we know by name all influence the way we cook.

Fish from the Atlantic ports. Goat cheeses from neighbouring farms. Chenin Blanc and Cabernet Franc from nearby vineyards. Wild boar in autumn. Artichokes in spring.

The Journal reflects this landscape — sometimes seriously, sometimes with irreverence — always with attention.

From the Archive

Several pieces were originally written by Wayne Milstead during the early years of Loire Kitchen. His voice — precise, curious and occasionally mischievous — remains part of the fabric of this house.

Where appropriate, those pieces are lightly updated for clarity while preserving their original character.

From the Kitchen

More recent entries reflect our ongoing teaching and cooking practice: the questions guests ask, the techniques that transform confidence, and the ingredients that define the season.

These essays sit somewhere between reflection and instruction — literary, but practical.

Cooking with Attention

If there is a unifying theme, it is this:

Cooking improves not through speed or spectacle, but through attention.

Attention at the market.
Attention at the stove.
Attention to flavour, balance and season.

The Journal exists to explore that idea.

If this philosophy resonates, it is experienced most fully during our small-group culinary holidays in the Loire Valley.
